I’m looking for guidance on the best way to setup permissions where a sales manager will see the activities for only the sales people they manage. Is it better to assign each sales person to a manager separately using a linked field, or assign a sales person to an office or team, then assign that office/team to the manager so that the manager automatically sees the activity of their sales people?

Honestly, either way will work, it’s best to reflect your real situation.
Do your sales managers manage a whole office, and everyone in them, or are there exceptions?
If there are exceptions, you’ll need a ‘Manager’ linked field on each Sales person, and then you can setup the manager permissions to also see activities from people they manage
